I think it's interesting that they don't say people should use headphones...the signs on American public transportation say that.

Actually I took photos of all the 10 etiquettes for the subway, and this is one of them. 음식 가지고 타지 않기.



A more difficult and formal way to say it would be 음식물 반입 금지

반입 means to bring something into a place.
금지 means prohibition.

Could you also say ...타기 없기? I know this wouldn't work for a sign but it seems like it could be said this way...

It's perfectly correct but 타기 없기 is an expression that would most likely be used among children or close friends when playing a game or promising each other something

A teacher would say to the students "컨닝하기 없기다!(Don't cheap in the exam.)" but that would make him/her sound a bit cute, and the students might feel safe to cheat.
