if i want to describe a girl as my 'other half', i.e. my soulmate, what's a good, poetic way to express that? is 마음의 상대자 ok?

You could use 나의 반쪽 literally meaning 'my other half' but it's hardly poetic in my opinion.

내가 소중하는 사람

I will say "내 짝이다"! :) It's pretty fitting cos "짝" can be used as one of a pair e.g 양말/구두/장갑 한 짝 - one side of a pair of socks/shoes/gloves, and it can also be used to mean "mate" or "partner"...

Sorry, I forgot about the "poetic" bit. How about the slightly modified "내 운명의 짝..."?
