To answer your question: ~๊ธฐ(๋ฅผ) ๋ฐ๋ผ๋ค is a more 'stronger' expression of wanting something (it literally means 'really hoping for something', whereas ์/์/์์ผ๋ฉด ์ข๊ฒ ๋ค literally means 'would be good if something was~'. So while they are used to mean 'want something', they do have slightly different meanings.

1. This one is difficult for people in Korea too. Technically, ๋ฐ๋ผ๋ค means to want something, and ๋ฐ๋๋ค means for something to fade. So to ask what you want, you would ask, ๋ฌด์์ ๋ฐ๋ผ๋์(what do you wish for)? However, in recent years people have started using ๋ฐ๋ to express your wish for something to happen.
Having said that, grammatically, ๋ฐ๋ผ๋์ would be the correct version.
2. The difference between ์ฌ๋ฏธ์๋ค and ํฅ๋ฏธ๋กญ๋ค would be that ์ฌ๋ฏธ means something fun or enjoyable. ํฅ๋ฏธ means interest. So ์ฌ๋ฏธ์๋ค would be 'fun', while ํฅ๋ฏธ๋กญ๋ค would be 'interesting'.
